Currently, fruit and vegetable are sold also in form of salads or juices. In today's flustered times, such ready-to-eat food are increasingly gaining popularity among consumers. Fresh fruit and vegetables are also a source of microorganisms that can cause alimentary infections and epidemics. These diseases can be caused by poor hygiene or contamination during food processing and handling. The aim of this work is to provide a comprehensive picture of the microbiological risk of ready-to-eat fresh vegetable and fruit salads and beverages. The work highlights the microbiota and colonization of plant matrices as well as diseases and epidemics related to their consumption. It also deals with possible prevention or elimination of undesirable microorganisms in food of plant origin. It contains the data of microbiological analyses carried out as part of the monitoring performed by Laboratory of microbiology and environment (Public Health Authority of the SR) and Laboratory of nutritive and environmental microbiology (Department of Nutrition and Food Quality Assessment FCHPT STU) in 2017 in Slovak Republic. Samples of fresh fruit and vegetables, salads, juices and smoothies were collected in mass caterers and fast food stalls in 10 regions of the SR. The highest number of positive samples was recorded for vegetable salads. In the case of smoothie drinks, the presence of antibiotic resistant coliform bacteria and enterococci has also been reported. In addition, bacteria causing pneumonia have also been identified in these drinks, which can also endanger the staff preparing beverages in the form of bioaerosols produced during preparation. Sirotkin;The products of petroleum industry low-weight aromatic hydrocarbons benzene, toluene, ethylbenzene, m/p-xylene, and o-xylene, also known as BTEX belong to most dangerous and stable environmental contaminants. They are parts of and additives to fossil fuels and as diluents of industrial products, as well as the intermediaries of organic synthesis for many industrial products. Analysis of the available literature demonstrates that BTEX can exert negative effects on various reproductive sites, including the CNS-pituitary-gonadal axis, their signaling molecules and receptors, ovarian follicles, Corpora lutea, oocytes, embryos, oviducts, ovarian cycles, spermatogenesis, fertility, and the viability of offspring. These effects could be due to the ability of BTEX to destroy chromosomes, to affect cell metabolism, including the accumulation of free radicals, and to affect the release of hormonal regulators of reproductive processes, hormonal receptors and post-receptory intracellular protein kinases. On the other hand, some studies demonstrated no and even positive effect of BTEX on reproductive processes. Reduction of the risk of negative BTEX influence on farm animal reproduction in Slovakia and other cpountries could be achieved by (1) limitation in BTEX use in economy, (2) monitoring and control of environmental BTEX level and (3) study of mechanisms of BTEX action on regulators of reproductive system and development of biomedical techniques to prevent the negative BTEX action on farm animal reproduction. efsa.focalpoint@land.gov.sk

In the Slovak Republic, its agent is circulating primarily in the natural cycle, with the sporadic occurrence of epidemics in humans. Due to the complex development cycle, the control of parasite in the sylvatic environment is virtually impossible. Increased populations of wildlife animals susceptible to trichinosis (red fox, wild boar) have amplified the biomass parasite in nature. The cosmopolitan species Trichinella pseudospiralis infecting also birds that can migrate over long distances also contributes to the spread of the disease. Since this for human highly pathogenic species has been recently confirmed in a wild boar and birds of prey in our territory, a regional risk assessment of trichinellosis in the Slovak Republic is required to provide data for effective control measures to prevent the parasite transmission into domestic cycle and the food chain. Sirotkin;The products of petroleum industry low-weight aromatic hydrocarbons benzene, toluene, ethylbenzene, m/p-xylene, and o-xylene, also known as BTEX belong to most dangerous and stable environmental contaminants. They are parts of and additives to fossil fuels and as diluents of industrial products, as well as the intermediaries of organic synthesis for many industrial products. Analysis of the available literature demonstrates that BTEX can exert negative effects on various reproductive sites, including the CNS-pituitary-gonadal axis, their signaling molecules and receptors, ovarian follicles, Corpora lutea, oocytes, embryos, oviducts, ovarian cycles, spermatogenesis, fertility, and the viability of offspring. These effects could be due to the ability of BTEX to destroy chromosomes, to affect cell metabolism, including the accumulation of free radicals, and to affect the release of hormonal regulators of reproductive processes, hormonal receptors and post-receptory intracellular protein kinases. On the other hand, some studies demonstrated no and even positive effect of BTEX on reproductive processes. Reduction of the risk of negative BTEX influence on farm animal reproduction in Slovakia and other cpountries could be achieved by (1) limitation in BTEX use in economy, (2) monitoring and control of environmental BTEX level and (3) study of mechanisms of BTEX action on regulators of reproductive system and development of biomedical techniques to prevent the negative BTEX action on farm animal reproduction. efsa.focalpoint@land.gov.sk

In the Slovak Republic, its agent is circulating primarily in the natural cycle, with the sporadic occurrence of epidemics in humans. Due to the complex development cycle, the control of parasite in the sylvatic environment is virtually impossible. Increased populations of wildlife animals susceptible to trichinosis (red fox, wild boar) have amplified the biomass parasite in nature. The cosmopolitan species Trichinella pseudospiralis infecting also birds that can migrate over long distances also contributes to the spread of the disease. Since this for human highly pathogenic species has been recently confirmed in a wild boar and birds of prey in our territory, a regional risk assessment of trichinellosis in the Slovak Republic is required to provide data for effective control measures to prevent the parasite transmission into domestic cycle and the food chain.
